Fresh Caprese Salad
Ripe tomatoes, creamy mozzarella, and fresh basil come together in a simple salad that works as a starter, side dish, or light lunch.
Ingredients
- 4 medium ripe tomatoes
- 12 to 16 ounces fresh mozzarella
- 1 cup loosely packed fresh basil leaves
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic glaze, optional
- 1/2 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper
Directions
Step 1 – Slice the tomatoes and mozzarella into 1/4-inch-thick rounds.
Step 2 – Arrange the tomato and mozzarella slices on a serving platter, alternating them and tucking basil leaves between the slices.
Step 3 – Drizzle with olive oil and balsamic glaze, if using. Season with salt and black pepper.
Step 4 – Serve right away, or let the salad stand at room temperature for up to 15 minutes before serving.
Larry's Tip
For the best flavor, use tomatoes that feel heavy for their size and let refrigerated mozzarella sit at room temperature for about 15 minutes before serving.
